Fancy a lemon flavoured custard tart? This recipe is very easy and you will not stop at the first batch!

Lemon Butter Tarts
- 270g T's Treats Lemon Butter
- 450g soft butter
- 3 x 55g eggs
- 100g almond meal
- 190g plain flour
- 580g extra plain flour
- 250g pure icing sugar
- Kara Coconut Cream, refrigerated
- Combine butter, sugar, egg, almond meal and 190g flour and mix to a smooth paste. Add remaining flour and mix until combined.
- Scoop onto a floured bench and work into a ball. Chill between one hour and overnight.
- Always work this pastry cold. Roll out and line tart cases. Bake blind for 12 to 15 minutes at 150°C or until golden.
- Freeze leftover pastry.
- Fill the tart cases ¾ full with T's Treats Lemon Butter and smooth out. Bake at 160°C for 10 to 15 minutes or till the butter bubbles. Cool and serve with coconut cream.
