Lemon Butter Tarts with Coconut Cream Print E-mail

Fancy a lemon flavoured custard tart? This recipe is very easy and you will not stop at the first batch!

Serves 4

Lemon Butter Tarts

  • 270g T's Treats Lemon Butter
  • 450g soft butter
  • 3 x 55g eggs
  • 100g almond meal
  • 190g plain flour
  • 580g extra plain flour
  • 250g pure icing sugar
  • Kara Coconut Cream, refrigerated
  1. Combine butter, sugar, egg, almond meal and 190g flour and mix to a smooth paste. Add remaining flour and mix until combined.
  2. Scoop onto a floured bench and work into a ball. Chill between one hour and overnight.
  3. Always work this pastry cold. Roll out and line tart cases. Bake blind for 12 to 15 minutes at 150°C or until golden.
  4. Freeze leftover pastry.
  5. Fill the tart cases ¾ full with T's Treats Lemon Butter and smooth out. Bake at 160°C for 10 to 15 minutes or till the butter bubbles. Cool and serve with coconut cream.
