Simple Date Pudding with Caramel Brandy Sauce Print E-mail

This sweet treat will leave you wanting more! Serve with chilled cream or icecream.

Date Pudding

  • 600g pitted dates, chopped
  • 500ml water
  • 1 tsp bicarb soda
  • 125g butter, softened
  • 155g dark muscovado sugar
  • 2 eggs
  • 185g flour
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • vanilla
  • 1 jar of Mandy's Caramel Brandy Sauce
  • Cream or icecream to serve
  1. Preheat the oven to 180°C. Grease a 23cm square tin or 6-8 smaller individual dishes.
  2. Put the dates and water in a saucepan and bring to a boil. Remove from heat and stir in bicarb soda, stir and cool to room temperature.
  3. Meanwhile beat the butter and sugar till light and fluffy. Add the eggs one at a time. Add vanilla, cinnamon, flour and date mixture and mix well.
  4. Divide the mixture among the prepared baking dishes and bake for 40 - 60 min depending on the size dishes used (insert a knife into pudding, the tip should come out clean).
  5. Serve the pudding warm with warmed caramel sauce. The sauce can be poured over the pudding and the lot reheated in the microwave for a few seconds. This will melt the sauce into the pudding, making a gooey sweet irresistible treat that just needs cream or icecream!
