Sweet Potato, Red Lentil and Coconut Soup Print E-mail

Serves 6

Sweet Potato, Red Lentil and Coconut Soup

  • 1kg orange sweet potato, peeled and diced into small pieces
  • 2 litres chicken stock
  • 1 can coconut milk
  • 50g coconut oil
  • 1 small onion, diced
  • 1 piece ginger (chopped approx 2 tblespns)
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 clove garlic
  • 2 cups red lentils
  • salt and pepper
  1. Sauté the ginger, onion, garlic and spices in coconut oil till softened.
  2. Add all the other ingredients and simmer, stiring occasionally, approx. 1½ hours. The lentils will break down leaving the diced sweet potato pieces.
  3. Season well and serve with some chopped coriander and crispy bacon.
