Sweet Potato, Red Lentil and Coconut Soup
Serves 6
Sweet Potato, Red Lentil and Coconut Soup
1kg
orange sweet potato
, peeled and diced into small pieces
2 litres
chicken stock
1 can
coconut milk
50g
coconut oil
1
small
onion
, diced
1 piece
ginger
(chopped approx
2 tblespns
)
2 teaspoons
ground
cumin
1 teaspoon
ground
coriander
1 clove
garlic
2 cups
red lentils
salt
and
pepper
Sauté the ginger, onion, garlic and spices in coconut oil till softened.
Add all the other ingredients and simmer, stiring occasionally, approx. 1½ hours. The lentils will break down leaving the diced sweet potato pieces.
Season well and serve with some chopped coriander and crispy bacon.
